PHYSICAL-CHEMICAL QUALITY OF THE DAIRY MILK GATHERED FROM FLECKVIEH BREED

Abstract
    In the current paper we aimed to establish the quality of integral raw milk gathered from Fleckvieh cows breed, through physical-chemical and biochemical analysis. The obtained results, at the end of determinations, were compared with the values indicated in ASRO Romanian Standard, SR 2418:2008 for integral raw milk and with the ones presented in the Guide for rearing of Fleckvieh cows breed.
    For establishing the quality we effectuated physical-chemical determinations for fat content the (%), protein titre (%), lactose (%), DM (%), NFDM (%), water content (%), ash (%), density (g/cm³), acidity (°T) and biochemical were made the reductase probe, methylene blue and resasurin method.
    For fat content the established mean value was 4.24±0.064% with 0.44% higher than the indicated value in the breed rearing guide. Regarding protein titre, standard allows a minimum value of 3.2%, rearing guide 3.29% and the value obtained by us was placed at a level of 3.35±0.008%. For lactose the obtained mean was 4.83±0.011% and regarding the content in NFDM was obtained a mean of 8.84±0.020%.
    Generally we can say that milk obtained from Fleckvieh cows breed, reared at Rediu Farm, was in according with the nowadays quality standards.

CALITATEA FIZICO-CHIMICĂ A LAPTELUI DE VACĂ PROVENIT DE LA RASA FLECKVIEH

Rezumat
    În prezenta lucrare s-a avut în vedere stabilirea calităţii laptelui crud integral provenit de la vacile de rasă Fleckvieh, prin analize fizico-chimice şi biochimice. Rezultatele obţinute în urma determinărilor au fost comparate cu valorile indicate în Standardul Român ASRO, SR 2418:2008 pentru Laptele crud integral şi cu cele din Ghidul de creştere al vacilor de rasă Fleckvieh.
    Pentru stabilirea calităţii s-au avut în vedere determinări fizico-chimice prin care s-a stabilit conţinutul de grăsime (%), titrul proteic (%), lactoza (%), SU (%), SUN (%), conţinutul de apă (%), cenuşa (%), densitatea (g/cm³), aciditatea (°T) iar din punct de vedere biochimic s-a efectuat proba reductazei, metoda cu albastru de metilen şi cea cu resazurină.
    Pentru conţinutul de grăsime valoarea medie stabilită a fost de 4,24±0,064% cu 0,44% mai mult decât valoarea indicată de ghidul de creştere al rasei. În ceea ce priveşte titrul proteic, standardul indică o valoare minimă de 3,2%, ghidul de creştere 3,29% iar valoarea obţinută de noi s-a situat la un nivel de 3,35±0,008%. Pentru lactoază media obţinută a fost de 4,83±0,011% iar în ceea ce priveşte conţinutul în SUN s-a obţinut o medie de 8,84±0,020%.
    În ansamblu, se poate afirma că laptele obţinut de la vacile de rasă Fleckvieh, crescute în cadrul Fermei Rediu, a corespuns normelor prevăzute în standardele de calitate.
