EFFECT OF MORINGA OLEIFERA LEAVES EXTRACT ON QUALITY OF BUFFALO MEAT PRODUCT

Abstract
    Moringa Oleifera Lam. (Moringaceae) leaves powder extract in three concentration levels 0.5%, 1%, and 2% was used as a natural antioxidant to study its effect on the quality of buffalo meat product. The data showed that there were no noticable differences between the treated and the control samples in the chemical composition, the expressible water, the water holding capacity, the cooking loss or the shrinkage values. The data also showed that the samples treated with Moringa leaves extract had lower TBA values and higher Feder values than the control ones. In the mean time Moringa leaves extract showed inhibiting effect on the growth of bacteria and increased the acceptability to the meat product.

EFECTUL EXTRACTULUI DIN FRUNZE DE Moringa Oleifera ASUPRA CALITĂŢII UNUI PRODUS DIN CARNE DE BIVOL

Rezumat
    Un extract preparat din pudră de frunze de Moringa Oleifera Lam.(Moringaceae) a fost utilizat în concentraţii de 0.5%, 1%, şi 2%, ca antioxidant natural pentru a observa efectul său asupra unui produs din carne de bivol. Rezultatele au arătat că nu există diferenţe notabile între probele din lotul de control şi din cele experimentale, în ceea ce priveşte compoziţia chimică, apa nelegată, capacitatea de reţinere a apei, pierderile şi modificările dimensionale la preparare. S-a observat că probele tratate cu extract din frunze de Moringa au prezentat valori mai reduse ale indicilor TBA şi Feder, comparativ cu lotul de control. În acelaşi timp, extractul a exercitat în probe un efect inhibitor asupra dezvoltării bacteriene şi a îmbunătăţit acceptabilitatea produsului de către consumatori.
